Flour is not a single ingredient; it is a system of starch, protein and fibre that hydrates, stretches and sets in a very particular way. Change that balance carelessly and your bread turns to brick. Here is how Blend adds protein and fibre without breaking the chemistry you rely on.

What flour actually does

When you add water to wheat flour, two proteins — glutenin and gliadin — link up into gluten, the elastic network that traps gas and gives bread its rise and chew. The starch around it gelatinises in the heat of the oven and sets the crumb, while fibre holds water and lends structure. Get the ratio right and the whole thing works in concert.

What we changed, and what we kept

Blend raises the protein and fibre while protecting the gluten-forming backbone that makes wheat behave like wheat. The dough still develops strength as you knead or fold, still proofs on a familiar timeline, and still browns through the same Maillard reactions that give a crust its colour and flavour.

There is one thing worth knowing: extra fibre is thirsty. Blend hydrates a touch faster than white flour, so a very stiff dough can feel tight at first. The fix is simple — hold back a little of the liquid and add it back only if the dough needs it.
