Ingredients

- 300 g Blend protein flour
- 1 tbsp baking powder
- ½ tsp salt
- 75 g cold butter, cubed
- 120 g sharp cheddar, grated
- 160 ml milk, plus more to glaze
Bakes 1 : 1Made with Blend in place of the flour you’d normally use — gram for gram, no recipe changes.
Method

Heat the oven to 210°C. Whisk the flour, baking powder and salt.

Rub in the cold butter until the mix looks like coarse crumbs, then stir through most of the cheese.

Add the milk and bring together into a soft dough — handle it as little as possible.

Pat to 3 cm thick and cut into 8 rounds. Glaze with milk and top with the last of the cheese.

Bake 15–18 minutes until risen and golden. Cool slightly before splitting.
